THM chocolate recipe with protein

This is my all-time most made Trim Healthy Mama inspired food (ok, so MAYBE the FSF is made more frequently, but this is more luxurious and divine…hello?!  CHOCOLATE!)  I love THM for its thoroughness and applicability, even though I maybe don’t completely utilize it 100% of the time.  Hey, I’m human (#perfectlyimperfect) and proud of it.  =0)

I posted this picture above on my FB page the other day and had several responses to it…I know I was THRILLED to enjoy each delightful morsel, as was my husband who devours these just as quickly as I do.  There is something so scintillating about knowing that I can have homemade chocolate in about 15 minutes with very little effort (ok, so some days, I’m too spent to even give that 4-5 minutes of effort for ready-made chocolate…refer to paragraph one, last sentence).

With no further adieu, I give you FREEZER POWER CHOCOLATE!!! (drum roll please)

Foodsy Tuesday: Freezer Power Chocolate (THM S)

Ingredients

  • ½ cup coconut oil (I use Tropical Traditions, which I purchase in 5 gallon containers when shipping is free…deals occur fairly regularly)
  • ¼ cup peanut butter (use what you like…here’s my homemade recipe)
  • 2 tbsp cocoa powder (whatever brand you like)
  • ⅛ tsp salt (my pantry is well stocked with Real Salt brand…YUM!)
  • 1 tsp vanilla
  • 1 teeny scoop of KAL Pure Stevia Powder (or a little more if you like it sweeter)
  • 1 scoop Protein Powder
  • handful of nuts, optional

Directions

  1. In small sauce pan, heat oil and peanut butter to melt together and create a liquid mixture.
  2. Slowly add the cocoa powder, and mix thoroughly to break up any clumps.
  3. Add additional sweeteners and flavors (salt, vanilla, stevia).
  4. Adding only a little at a time, begin to shake in some of the scoop of protein powder.  Protein powder tends to clump up, so mixing it in slowly at a time helps to avoid the mouthful of powder in some chocolate bite.  Continue until all of the scoop has been added and is mixed through.
  5. Add nuts, if using (I love peanuts or almonds for this).
  6. Cover a large, flat container with parchment paper.  I have a rectangular plastic container that I use for this, which works well, but a baking dish would also work.  Remember, the thinner the mixture lays out the thinner the chocolate pieces will be, so try not to make it spread out too thin…but trial and error simple means more chocolate tastings =0)
  7. Place container of choice into freezer and let set for about 15 minutes to freeze through.
  8. Once time is up take parchment paper out of container and chop up chocolate with a knife.  I just literally jab at my chocolate one section at a time and let it break apart however it breaks.  It just feels more authentic to me that way.
  9. Enjoy the delightful, homemade, protein-rich morsel of chocolatey goodness.

    I can’t wait to try this recipe. I am new to THM and love peanut clusters. How many servings would you consider this recipe to be?
