Soup, friendly to THM E, Trim Healthy Mama

This has been a very frustrating winter for us!  You see, while everyone else has been experiencing a virtual SNOWMAGEDDON this side of the country, we on the other hand have received a cough of snow.  No, no, more like a sneeze of snow!  As though the clouds simply hurry on past the specific point where we live and zip up their snow removal jacket to hold the snow for the next neighborhood to pass!

What have we received instead?  Rain!  Or simply frigid temperatures with nothing but a frozen nose to show for it!  Disappointing, I tell you, especially when everywhere around us it seems the heavens are opening with fluffy white cold flakes!

This is frustrating because we WANT snow!  A few years back we had the snowfall of our lives when we had something like 3 blizzards in one winter!  My husband had to get on the roof to remove snow so that it would not collapse, and he mourns the lack of snow activity we have had this winter because he wants to feel useful with such an activity once again…yeah, I know we’re weird…you can say it ::wink, wink::

But, I digress; winter is for sure upon us, so I decided to conjure up a delicious recipe for a hearty soup to warm the soul and delight the tastebuds, and wow was it yummy!!!  This recipe is friendly to THM (Trim Healthy Mama) as an E meal, though I have not done specific calculations, so adjust if needed.

Foodsy Tuesday: Hearty Turkey, Bean, & Veggie Soup

Ingredients

  • 1 lb ground turkey
  • 2 diced onions
  • 6 cups chicken broth (homemade if possible)
  • 1 1/2 cups frozen mixed vegetables
  • 3 cups cooked kidney beans
  • 2 cups frozen spinach
  • 2-4 cups water, if desired
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp dried thyme
  • 1/2 tsp oregano
  • Pepper, to taste

Directions

  1. In large sauce pan on med-high heat, brown ground turkey and add onions.  Cook until onions are softened.
  2. Add all other ingredients, adding a little more water if desired.
  3. Bring to boil and then reduce to simmer for 45 mins to 1 hour.
  4. Enjoy!
